Chicken Artichoke Pizza is a wonderful alternative to traditional pizza.  It features an almond based, grain-free, gluten-free crust and, instead of sauce, it combines the robust flavors of tomato, artichoke hearts and oregano.

We love experimenting with new pizza flavors and creating our own homemade pizzas.  Don’t get me wrong we still order pizza and pick it up, however, there is something about making homemade pizzas on the grill or in your own oven that really get your creative juices flowing.  The kids are even more apt to try the creations we have came up with since they are involved with it.  So when we made this Chicken and Artichoke Pizza, they were skeptical but were very pleased with the results!

While this is not 100% Paleo friendly, it’s definitely a wonderful alternative to traditional pizza that leaves you feeling bloated and tired. It features an almond based, grain-free, gluten-free crust and, instead of sauce, It combines the robust flavors of tomato, artichoke hearts and oregano.

The crust recipe is easy and only takes a few minutes. Spread thick it will yield a 10″ crust – spread thin it will yield a 12″ crust. This paleo crust is the best I’ve found and uses Arrow Root to give you an amazing, crunchy edge.

Chicken and Artichoke Pizza

 

Servings: 10 ” pizza

Ingredients

Crust

1 1/2 cup almond flour
3/4 cup arrowroot powder
1 tsp baking powder
1 tsp salt
1 tsp oregano
1/4 tsp garlic powder
1/4 tsp black pepper
2 eggs
1/3 cup milk or almond milk

 

Toppings

1 can artichoke hearts
1 large tomato
2 cups shredded mozzarella cheese
olive oil
1 – 2 Chicken Breasts

Supplies

Pizza stone/pan

Instructions

Bake chicken breast according to directions and then cut into thin slices or cubes and set aside
Preheat oven to 425 degrees F and grease a pizza pan or pizza stone.
Combine all dry ingredients until completely blended.
Add eggs and milk to dry ingredient mixture.
Mix well. Mixture should be thick, but not difficult to stir.
Use a wooden spoon or spatula to spread mixture on pan/stone in a circular motion, beginning in the middle and working your way outward.
Bake for 10 – 12 minutes.
Remove from oven and cover with 1 cup of cheese.
Place your artichoke, tomatoes and chicken.
Drizzle lightly with olive oil.
Optional: sprinkle with oregano.
Cover with remaining 1 cup of cheese.
Place back in oven and cook for 10 minutes.

  1. Artichoke hearts are one of my faves. I use them in hummas, dip, just eat them from the jar — you name it. But, I’ve never had them on pizza, so I will definitely try this!

  2. Your recipe looks wonderful. Although dairy is not considered to be paleo friendly, there are some great alternatives for cheese. One recipe I found is one for Parmesan “cheese”. It uses cashews and minced garlic. Put on a food processor and mix until it looks like Parmesan cheese and it tastes like it too! I use this on our paleo pizza as an alternative for cheese and it’s very yummy! :)
