This is a healthy pancake recipe with added carrots and spices and made without flour. No way would Gavyn ever consider picking up the orange sticks and chomping on them. He loves my “carrot cake” pancakes. Enjoy this carrot pancake recipe, it’s kid friendly!
1/2 cup shredded carrots (about 10-15 baby carrots)
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 cup Old Fashioned Oats
8 ounce carton egg substitute(or 4 eggs)
Butter flavored non stick cooking spray
Preheat your griddle to 350°. Add the shredded carrots to a blender. I actually chop mine with the Chef’n VeggiChop, my must have kitchen gadget. Add spices
Then add the oats and egg substitute.
Pulse on low for about 30 seconds. It should be kinda thick. If it’s too runny add a little more oats.
Spray your griddle with non stick cooking spray. Pour the pancakes on the griddle.
I make ours kinda small but you can make them however small or big you would like. When you see bubbles form on top, flip over.
Cook until they are nice and golden, and serve with fresh fruit and syrup
Makes about 8 pancakes.
These freeze really well, so triple up on the batch and freeze whatever is left over. They are amazing for breakfast, as well as a snack. I call these Carrot Cake Pancakes because my kids love carrot cake, but they still have no clue carrots are inside…ENJOY!
