Dole Pineapple Downside-Up Cake is such a sweet and delish classic recipe!  Since Mickey’s 90th Anniversary is just in a few weeks, there is no better time or way to mark this special occasion!

Mickey Mouse, if you think about it, is a true original character.  Even though his look has changed up a bit, he is still the same lovable character has he was 90 years ago.  I think that is one of the reasons that I still absolutely adore Mickey!  It’s a part of my childhood, he was a part of my parents childhood, and he continues to be a steadfast character through the generations!

Another true original that has stood the test of time is Dole produce.  Dole has been around for 167 years!!  So it is only fitting that both Dole and Disney are partnering together to mark Mickey’s 90th Anniversary!

Dole Pineapple Downside Up Cake

This isn’t the first time though that Disney and Dole have worked together!  They have actually been a team since 1976 when Dole became the sponsor of the Enchanted Tiki Room at the parks.  Which by the way, still is alive and kicking today! I mean, if you have ever had the Dole Whip, well, let’s say you can understand WHY they are still partners!  It is amazing!

Dole Pineapple Downside Up Cake

Makes 10 servings

INGREDIENTS

6 tablespoons of buttery spread

1 cup honey (divided)

1/2 fresh DOLE® Tropical Gold®
Pineapple, cored, cut into thin
slices

1-3/4 cups gluten-free flour

2 teaspoons baking powder

1/4 teaspoon salt

6 tablespoons olive oil

2 large eggs

2 teaspoons vanilla extract

1/2 cup DOLE Pineapple Juice

DIRECTIONS

PREHEAT oven 350°F.

COMBINE ½ cup honey and buttery spread in a saucepan, over medium heat, stirring until the buttery spread has melted. Continue stirring until the mixture starts to boil, cook for 2 to 3 minutes or until mixture has thickened. Evenly pour sauce into 9-inch round cake pan to coat the bottom of the pan. Arrange the pineapple slices on top of the sauce in a single layer.

PLACE remaining ingredients into blender. Cover; blend until smooth, pour the batter over the pineapple slices and spread evenly.

BAKE 45 to 50 minutes or until the top is a deep golden brown and a toothpick inserted in center comes out clean.

COOL cake in the pan for 5 minutes, place a plate over the pan and then turn the pan over, inverting the cake onto the plate, serve warm or at room temperature.
