Happy Heart Day to you! When my youngest was little, she started saying “Happy Heart Day” instead of Valentine’s Day. So for us, Happy Heart Day is how we address Valentine’s Day!
I admit I have a real soft spot for cupcakes. I haven’t found a cupcake I didn’t like. Let’s just face I’m a fit of a cupcake fan. I even watch a TV series that is all about cupcakes. Yes, it’s a bad thing!
We are getting together with a bunch of our friends this weekend for Trivia Night. Trivia Night is so much fun! Friends, food, and family friendly questions. It’s a great way to spend time together.
Since Happy Heart Day is just a few days away, I decided to make Happy Heart Day Cupcakes.
I love baking from scratch when time permits, but sometimes using a box mix works just as well. One thing I have always struggled with making from scratch though is frosting. I don’t know why, but I do. So this time I decided to see if I could doctor up a container of store bought frosting.
I put the frosting and started adding the powdered sugar into the mixer. Now before I proceed, I must remind you that if you are adding any type of dry ingredients into a mixer, make sure the mixer’s speed setting is on slow. If you don’t, you will have a huge mess all over you AND your kitchen. I speak from experience…..lots and lots of experience.
After you’ve mixed all of the powdered sugar into the frosting, turn the speed up to high and let it mix for about a minute or two until it’s the consistency that you like. Then there you have it:
I ended up adding 6 tbsp. of powdered sugar because I really wanted it stiffer so it could hold up the Wilton candy hearts I was using.
Then all you have to do is put the frosting into a decorators bag and decorate your cupcakes!
