With those chaotic evenings right around the corner, I am always looking for quick and easy weeknight dinners. So, recipes like this orange-glazed salmon are perfect!
I love making one sheet pan dinners. They are easy to clean up, full of flavors that have a chance to marry together while everything is baking, and it’s very easy prep! Salmon is not only very easy to prepare, it’s also good for you to eat. If you’ve never prepared salmon before, here are some tips before you head to the store.
TIPS ON PREPARING SALMON
DO YOU NEED TO SOAK SALMON BEFORE COOKING?
Since cooking salmon normally makes the skin turn white, you can soak the salmon in a basic salt brine for 10 minutes before cooking.
DO YOU HAVE TO REMOVE THE SKIN?
No, when you are cooking or baking it, you do not. Just discard the skin while you are eating the salmon. However, if you prefer to remove the skin, it’s not difficult at all.

HOW DO I MAKE SURE THE SALMON IS DONE?
As salmon cooks, it will start to change from a raw/red look to a opaque, almost pink look, as it is cooking. After it’s cooked for about 6 to 9 minutes, take a sharp knife and cut into the thickest part of the filet. If the meat is getting flakey, it is done. If it looks raw still inside, you will need to continue to cook longer.
ORANGE-GLAZED SALMON WITH ASPARAGUS
Prep time: 5 minutes
Cook time: 15-18 minutes
Serves: 4
Ingredients:
4 6-oz. each salmon filets, preferably wild-caught Alaskan
3 T. fresh orange juice
2 t. honey
3 T. extra virgin olive oil
2 T. balsamic vinegar
2 garlic cloves, finely minced
1½ lb. asparagus, tough end removed
1 t sea salt
Black pepper, as needed
Directions:
1. Preheat oven to 400°F and line a large, rimmed baking sheet with a piece of parchment paper or a Silpat® baking mat. Place the salmon filets skin side down in the center of the baking sheet and set aside.
2. In a medium bowl, whisk together the sea salt, pepper, juice, honey, olive oil, balsamic vinegar, and garlic. Then brush over the salmon.
3. Add the asparagus to the bowl with the orange juice mixture and gently toss to combine. Season with sea salt and black pepper, to taste.
4. Arrange asparagus around the salmon filets in a single layer and place sheet pan in pre-heated oven. Bake for 15-18 minutes, or just until the salmon is flaky and the asparagus develops a bit of color, being careful to not overcook the salmon.
5. Remove from oven and serve immediately. Enjoy!
