Cilantro Lime Chicken and Rice!

Ingredients

  • - 1 Cup Rice I used white Basmati rice
  • - 1 Cup Broth any flavor you choose
  • - 1 Cup Water
  • - 2 tablespoon Butter
  • - 1-2 Cup Cooked Shredded Chicken
  • - 1 Cup Black Beans rinsed
  • - ½ Cup Chopped Cilantro
  • - 2 Limes
  • - Salt to Taste

Instructions

  • In a Medium skillet, place the rice, broth, water, and butter. Cover and cook for 17-20 minutes. If using a different rice, then cook according to your package directions. Depending on the type of rice being cooked, times can vary.
  • Once rice is cooked, add the beans, cooked shredded chicken, cilantro, and the juice of 1-2 limes. Mix together. Depending on your taste, add more or less lime juice.
  • Salt to taste and serve.
