Ingredients

For the Donuts

  • 1 cup all-purpose flour
  • 2 tbsp. cornstarch
  • cup sugar
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ cup milk
  • 1 large egg
  • 1 tbsp. unsalted butter melted
  • 1 tsp. pure vanilla extract
  • ½ cup fresh strawberries diced

Ingredients for the Glaze

  • 1 tbsp. powdered sugar
  • 1 - 2 tsp. lemon juice
  • 1 tsp. pure vanilla extract

Instructions

  • Preheat the oven to 350 degrees.
  • Spray the donut pans with your favorite nonstick cooking spray and set aside.
  • In a large mixing bowl, add in the dry ingredients; flour, salt, cornstarch, sugar, and baking powder. Whisk them together until they are well combined.
  • In a small mixing bowl, add in the wet ingredients; milk, egg, butter, and vanilla. Whisk those ingredients together until they are well combined. Then add in the berries.
  • Add the wet ingredients into the dry until they are just combined by gently folding the wet into the dry. Do NOT OVERMIX the batter. Mix until everything is just combined.
  • Fill each of the donut mold cavities about ½ full.
  • Bake for about 10 – 12 minutes or until the toothpick comes out clean. Cool in the pan for five minutes and then remove the donuts and place them on a cooling rack.
  • While the donuts are cooling, prepare the glaze. In a small bowl, add in the powdered sugar, vanilla, and lemon juice and whisk the ingredients together. If the glaze is too thick, add more lemon juice until it’s the consistency you are looking for. Then drizzle the glaze over the donuts.
  • Allow the glaze to cool, then enjoy!
  • Once the donuts have cool completely and the glaze has set, you can store them for up to 5 days in an airtight container in the fridge.
