If you have leftover apples, then ourĀ Apple Cinnamon Oatmeal BreadĀ is one to try! Not only is this quick bread full of granny smith apples, but it also has oatmeal, cinnamon, and applesauce. This moist bread is perfect for breakfast or a light snack.

Ingredients

  • 2 Granny Smith apples peeled and chopped
  • Ā¼ cup unsalted butter softened to room temperature
  • ā…› cup white granulated sugar
  • 1 Ā½ cup light brown sugar
  • 2 teaspoons ground cinnamon separated. You will use 1 teaspoon in the batter and 1 teaspoon in the loaf pan.
  • Ā½ teaspoon ground nutmeg
  • Ā¼ teaspoon ground cloves
  • 1 large egg
  • 1 egg white
  • 1 Ā½ cup all-purpose flour
  • 1 Ā½ teaspoons baking powder
  • Ā¼ teaspoon baking soda
  • 1 teaspoon kosher salt
  • Ā½ cup unsweetened applesauce
  • Ā½ cup plain yogurt
  • 1 cup old-fashioned rolled oats

Instructions

  • Wash, dry, peel, and core your apples.
  • Chop or dice them into very small pieces. Then add them into a medium-sized bowl and set aside.
  • Preheat the oven to 350Ā° degrees. Then prepare your loaf pan by greasing it with your favorite nonstick spray, butter, or shortening. Then sprinkle 1 teaspoon of ground cinnamon into the loaf pan.
  • In a large-sized bowl, using a mixer, cream together the unsalted butter and the white granulated sugar until it's fluffy and creamy.
  • To this mixture, add the light brown sugar, ground cinnamon, ground nutmeg, ground cloves, and ground cinnamon. Mix together. Then add in your eggs, one at a time until they are thoroughly incorporated.
  • Turn off of the mixer, and add in the all-purpose flour, baking powder, baking soda, and kosher salt. Then using a spatula, mix the ingredients together.
  • Stir in the unsweetened applesauce, plain yogurt, and old-fashioned rolled oats and mix them together. Then add the apples and toss until they are incorporated.
  • Pour the bread batter into the prepared pan and use a knife to level the batter.
  • Bake for 60 minutes then check the bread. Depending on your oven, it may be done. Or it may need more time. Stick a cake tester into the middle of the bread. If it comes out with crumbs on it, it is done. If it comes out still wet, then place it back into the oven for 10-minute increments.

Notes

You can use quick oats in lieu of old-fashioned oats.
We used plain yogurt, but you can use Greek. Keep in mind it may change the taste.
Make sure the baking powder and soda are fresh and not expired.Ā 
You will want to chop your apples as small as possible, so they bake correctly into the bread.Ā 
When prepping your pan, either use nonstick cooking spray, shortening, or unsalted butter. I used butter when doing mine.Ā
