Ingredients

  • 12 eggs
  • 1 medium onion peeled and diced
  • 1 bell pepper diced
  • 8 oz diced ham
  • 1 cup 2% milk
  • Salt and pepper to your liking
  • 1 cup shredded cheese
  • 1 small tomato diced
  • Fresh chives

Instructions

  • Add a tbsp. of oil to your cast iron skillet, place it on your stovetop and turn the heat to medium.
  • Preheat the oven to 400 degrees.
  • While the pan and oven are heating, cut up the veggies.
  • When the cast iron skillet is heated, add in the ham and vegetables.
  • Sauté the vegetables and ham until the vegetables are soft.
  • Whisk the eggs together and add in the 2% milk and the salt and pepper. 
  • Slowly pour the egg mixture into the skillet and stir everything together.
  • Then place the skillet into the oven.
  • After about 10 minutes, add in the diced tomatoes and the shredded cheese.
  • Continue checking every 7 minutes to make sure that the frittata is cooked thoroughly.
  • To test the doneness of the dish, stick a knife into the center of the frittata. If it comes out clean, then the frittata is done.
