How to Make the Best S'mores Brownie Cupcakes EVER!

S’Mores Brownie Cupcakes and the combination of brownies, warm chocolate, and gooey marshmallows is a treat worthy of being served any time of the year.

Equipment

  • Muffin tin
  • Cupcake liners
  • Large bowl
  • Spoon
  • food processor
  • Wire rack

Ingredients

  • 1 box Betty Crocker Brownie Mix or other
  • eggs water and oil according to brownie mix box
  • 1 ½ cups graham cracker crumbs approx. one sleeve of graham crackers
  • cup sugar
  • 6 tablespoons unsalted butter melted
  • 1 bag mini marshmallows

Instructions

  • Preheat the oven according to the directions on the brownie mix.
  • Prepare the muffin tin by either lightly spraying with your favorite cooking spray or lining with paper liners. Set aside.
  • Grind graham crackers in food processor until fine then add the butter and sugar. Mix well.
  • Using your fingers, mold the crumbs on the bottom and sides of the cupcake liners.
  • Set in refrigerator to chill for 15 minutes.
  • Following the instructions on the box of brownies, prepare the brownie mix.
  • Then remove the muffin tin from the fridge and fill each ⅓rd of the way full of the brownie batter.
  • Bake as directed on the box of brownies.
  • Remove from oven and cover the top of each cupcake with mini marshmallows.
  • Then turn your oven to "broil". Place the cupcakes back into the oven until the marshmallows are lightly browned on top.
  • Remove from the oven and place on a wire rack to cool.
