Elderflower Lemonade

Elderflower lemonade is tasty take on honey lemonade. This delicious lemonade is made with fragrant elderflowers, sweet honey and tart lemons. If you are looking for a refreshing cold beverage is enjoy while sitting outside on the porch during late Spring and early Summer, this is the recipe to bookmark!

Ingredients

Simple Syrup

  • ½ c honey
  • Elderflowers from 6 umbles clusters
  • 1 c water
  • Juice from half a lemon

Lemonade

  • 5 lemons
  • 4 c water
  • strained Simple Syrup

Instructions

To Make the Elderflower Simple Syrup

  • Combine the water, honey and flowers together in a small pot and bring just to a boil and then turn off the heat. Stay with and watch the pot the entire time as it will come to a boil extremely quickly.
  • Let the syrup cool naturally on the counter and then cover and chill overnight.
  • Strain the flower out of the syrup, being sure to get all of the sweet goodness out of the flowers by pressing on them and then discard the leftovers.

To Make the Lemonade

  • Juice the lemons through a fine strainer, juicer, by hand, your preference, just keep the seeds out of the finished lemonade.
  • Add the lemon juice, water, simple syrup and ice to a pitcher and mix.

Notes

Be sure to include only the flowers and remove as much of the stem as possible as the stems can be toxic.
 
The stems on the garnish flowers are alright as long as they do not sit in the lemonade for a prolonged amount of time and are not ingested.
 
The flowers are edible and safe.
 
The Elderflower Simple Syrup will need to be made in advance. Preferably up to 48 hours before hand, however, overnight is fine too.
 
We also chose to save the lemon halves and added those to the lemonade pitcher. We found that this helped to keep the flavor intact as the ice melted. Even after 5 cups of ice had melted, the flavor stayed the same
