Bake chicken breast according to directions and then cut into thin slices or cubes and set aside
Preheat oven to 425 degrees F and grease a pizza pan or pizza stone.
Combine all dry ingredients until completely blended.
Add eggs and milk to dry ingredient mixture.
Mix well. Mixture should be thick, but not difficult to stir.
Use a wooden spoon or spatula to spread mixture on pan/stone in a circular motion, beginning in the middle and working your way outward.
Bake for 10 - 12 minutes.
Remove from oven and cover with 1 cup of cheese.
Place your artichoke, tomatoes and chicken.
Drizzle lightly with olive oil.
Optional: sprinkle with oregano.
Cover with remaining 1 cup of cheese.
Place back in oven and cook for 10 minutes.
