There is really no better time for Ice Cream then a hot Summer day, however, we all know what happens to ice cream when it’s warm out. These Ice Cream Cone Cupcakes are a fun twist on serving up traditional ice cream, plus they are super portable and would be a perfect complement if you are planning an Ice Cream Party!

To make Ice Cream Cupcakes, all you will need are prepared cupcakes (either buy a cake mix and make your own or pick up a few that are already made from a local store), a can of chocolate frosting, a can of white frosting, a package of vanilla wafer cookies, a package of cherries gummy candies, and pink food coloring.

Cupcakes – we used ones that were already made, however, you can make your own from a cake mix or from your favorite homemade recipe.

Step by Step Directions

**This recipe was made using pre-made cupcakes. If you are making your own, add additional time to the recipe to make the cupcakes.

Step 1. Using a sharp knife, cut 3 vanilla wafer cookies in half and cut each half into a cone shape.

Step 2: Frost each cupcake with a thin, smooth layer of white frosting.
Step 3: Set a wafer cone on top of each cupcake with the wide end of the cone laying on the middle and the point end hanging over the edge of the cupcake.

Step 4: In a small bowl, mix some white frosting with a few drops of the pink coloring. Put this pink frosting into the piping bag. Set aside.
Step 5: Pipe a circle of pink frosting right above the cone so it looks like a scoop of ice cream. At the bottom of the pink circle, right where the cone line meets the pink frosting, pipe about 5 rosette dots in a row. You want it to look like the little rim on the scoop of ice cream when you scoop it out.

Step 6: Place a cherry gummy at the top of the round circle scoop.
Step 7: Optional: Drop some sprinkles on each scoop of ice cream.
Step 8: Repeat steps 5-7 using the chocolate frosting on the other cupcakes.
Step 9: Fun treat for summer parties!

You can also change up the frosting flavors to suit your own personal favorites!  You could use different sprinkles, you could omit the cherries, you could sprinkles chopped nuts on the top.  There are hundreds of variations.  The main thing is, when they are all done, just sit back and enjoy!
