Best Beef Pot Roast and Potatoes recipe ever? Any time one says they have the "best" recipe, I know I always have to stop and say, "Really, tell me about your recipe".
One of my family's comfort food recipes is beef pot roast and potatoes. I mean for me, it's comfort food at it's best. And usually there are lots of left overs which can be made into beef and noodles the next day. The only "problem", well not really a "problem", but this recipe normally used to take me all day to make. I would prepare everything, throw it into the crockpot on low, and dinner would be ready about 8 hours later. It's one of the recipes that you really have to think ahead to make.

I have to admit that I am probably one of the last people on the face of the earth who doesn't own a type of an instant pot. I own three slow cookers and a pressure cooker that I use for canning. One of the reasons I don't jump on a lot of appliances when they first come out is because of room. I don't want to own 100 different appliances. My kitchen just isn't big enough. That is why when I heard about Mealthy's 9-in-1 MultiPot, I was very intrigued!

For our #MealthyMoms challenge, I made Beef Pot Roast and Potatoes! I used the recipe that is included in the Mealthy recipe guide. That way I could make sure I did everything the recipe suggested according to Mealthy guidelines.

DO YOU LITERALLY JUST PLUG THE MULTIPOT IN, SELECT THE PROCESS YOU WANT, THEN START COOKING?
Yes and No. Once you plug in the multipot, you will have to let it pre-heat. Since this is also a pressure cooker, you will need to let the pressure build up then the cooking time actually starts. Then there is a wait while the pressure is decreasing in the unit before you can take the lid off.

Best Beef Pot Roast and Potatoes
Ingredients Needed
3 lb boneless beef chuck roast or shoulder, trimmed
salt and ground black pepper to taste
2 tbsp. olive oil
1 large yellow onion, chopped
3 garlic cloves, minced
1 14.5 oz can beef broth
¾ cup dry red wine
2 fresh thyme sprigs
2 fresh rosemary sprigs
2 lbs Yukon Gold potatoes, scrubbed and cut into 1 ½ inch chunks
6 carrots, pealed and cut into 1 ½ inch chunks (we omitted)
1 bay leaf
Directions
Season beef generously all over with salt and black pepper.
Heat olive oil in your MultiPot and set to Sauté. Cook beef in hot oil until browned on all sides, 5 to 7 minutes per side. Transfer to a plate.
Sauté onion and garlic in the remaining hot fat until soft and fragrant, about 3 minutes. Pour beef broth and red wine into the pot to deglaze, using the flat edge of a wooden spoon to scrape any browned bits of food and the bottom of the pan.
Return beef to the pot; add thyme and rosemary.
Lock MultiPot lid in place, turn steam vent handle to Sealing, and select Meat/Stew. Cooking on High Pressure 45 minutes. let pressure release naturally, Remove lid.
Add potatoes, carrots, and bay leaf to the pot.
Lock MultiPot lid in place, turn steam vent handle to Sealing, and cook on High Pressure for an addition 4 minutes. Turn steam vent handle to Venting to quick-release pressure. Remove lid.
Discard thyme and rosemary sprigs. Transfer beef to a large serving platter. Arrange the vegetables around the pot roast to serve.
