White Chicken Chili – How to Make this Delish Chili!

White Chicken Chili is a nice change from basic chili, which uses ground beef and a red base with tomato puree. While we enjoy a nice bowl of chili with crackers and corn muffins, like this amazing Firehouse Chili, our White Chicken Chili warms you immediately.
WHAT MAKES WHITE CHICKEN CHILI DIFFERENT THEN BASIC CHILI?
While both types of chili has beans in it, White Chicken Chili has white beans in it. You can use either Garbanzo beans or Great Northern beans. For this recipe, I used Great Northerns.
WHY DID YOU PUT CORN IN THIS RECIPE?
I put corn in our recipe because I wanted to added a different texture to the recipe.
DO YOU HAVE TO PUT GREEN CHILIES INTO THE RECIPE?
No, you definitely do not. If you want to add them, by all means do. If not, there is still an amazing spicy favor thanks to the warming spices such as cumin, and cayenne pepper.
Our White Chicken Chili is topped with favorites such as green onions, sour cream and pepper jack cheese which makes this dish a wonderful recipe to warm you up during the cold winter months in an instant. It is spicy so kids probably won’t enjoy it, so make sure you have something for them. Or you can modify the recipe and omit the spicy ingredients. My youngest won’t eat White Chicken Chili so I always make her Mac ‘n Cheese and she is fine with that!
And another reason this recipe is a fav is because you can take the left overs and make white chicken chili enchiladas the next day, by wrapping up the chili, adding jalapenos, onions and cheese in tortillas and baking in the oven, removing and topping with sour cream; YUM!
White Chicken Chili Recipe

White Chicken Chili with spices and chilies to give it zing. Easily can be made in the slow cooker.
Ingredients
1 lb bag Great Northern Beans-Soaked-according to package or two 12 oz canned beans
1 tablespoon extra virgin olive oil
1.5 lbs boneless skinless chicken breasts-cut into bite size pieces
2 cloves garlic-mince
1 medium sweet onion-chopped
1 4oz can green chiles
1 teaspoon ground cumin
1 teaspoon cayenne pepper
1/4 teaspoon white pepper
1/2 teaspoon oregano
48 oz container chicken broth
salt and pepper to taste
1-2 teaspoon cornstarch
Garnish-green onions, tortilla chips, sour cream, pepper jack cheese
Instructions
Soak beans according to package direction-I do mine overnight. Cut chicken into bite size pieces. Heat oil in large skillet on medium heat. Cook chicken until juice run clear and no longer pink. Add garlic, onion and green chiles. Mix well. Add to a large pot and add cumin, oregano, cayenne pepper, white pepper, beans and broth. Stir to combine. Simmer on low 2-3 hours stirring occasionally. 10 minutes before ready to eat, add 1/4 cup liquid with cornstarch in a cup, Stir. Add to chili to thicken. Top with garnish and salt and pepper if you choose.
