How to Make Mexican Bubble Pizza

Expert Tips, Ingredient List and Suggestions for Recipe Success
- Ground beef - you can use percentage for this. I normally use 80/20.
- Canned biscuits - any brand or type will work.
- Red Enchilada Sauce - you can also use salsa or taco sauce. It's totally up to you.
- Shredded cheese - I used a Fiesta flavored blend.
- You can make this in a 9 x 13 casserole pan, a cast iron skillet, or a 2 qt casserole pan. It's totally up to you.
- I made a Lime Crema to top this with. I included the directions below. You can also just top with sour cream.
Why Is It Called Bubble Up?
Quite simply because the biscuits are bubbling up, which are causing the toppings to rise. It's actually quite beautiful to watch inside your oven.
What Type of Toppings Can I Use?
Besides the ground beef, you can add on any of your favorite Mexican toppings. Sour cream, cilantro, green onions, salsa, shredded cheese, black olives, tomatoes, guacamole, tortilla strips, or shredded lettuce. Honestly, whatever your family loves. Make sure to serve it with a side of tortilla chips.
How Is It Usually Served?
Straight from the oven and dished on to plates. Now, when I made ours, I made them in different sized Staub casserole dishes and two of us had individually sized servings. You can get as creative as you would like. You can make this in a cast iron skillet, a 9 x 13 casserole, an 8 x 8 pan, or smaller sized pans. It's totally your decision.
Step by Step Directions
Step 1: Lightly spray a 9 x 13 casserole dish, an 8 x 8 pan, or whatever size of oven-safe dish you are using and set aside.
Step 2: Preheat the oven to 400 degrees.
Step 3: Heat your cast iron skillet and once it's heated to medium heat, add in your ground beef. Season with kosher salt and cook until the meat is cooked thoroughly, which is until it's no longer pink and registers at 160 degrees with a meat thermometer. Drain the hamburger if needed and add in the red enchilada sauce.
Step 4: While the ground beef is cooking, using a sharp knife, quarter the biscuits and add them into your prepared pan(s) in a single layer.
Step 5: Place them in the oven for approximately 5 to 10 minutes or until they are starting to lightly brown.
Step 6: Remove the biscuits from the oven and top with the seasoned ground beef. Place back in the oven and bake for 20 minutes.
Step 7: While the Bubble Pizza is baking, prepare the Lime Crema.
Step 8: To make the crema, in a medium-sized bowl, add in the sour cream, garlic powder, lime juice, and salt. Stir the ingredients together. Taste the crema and if it's to your liking, add it to a serving bowl, top with the zest of the lime and place it on the table. If you feel it needs more seasoning, add in more garlic powder, salt, or lime.
Step 9: When the timer goes off, remove the Bubble Pizza from the oven, top with the shredded cheese, and bake for an additional 5 to 10 minutes until the cheese is melted.
Step 10: Remove from the oven and serve.

Ingredients
Mexican Bubble Pizza
- 1 lb. ground beef cooked and drained
- kosher salt season to taste
- ½ cup red enchilada sauce or taco sauce or salsa
