     This Strawberry Banana Greek Yogurt Parfait recipe will quickly become a family favorite! It's yummy, versatile, and quick and easy to put together! 

    Easy to Make Strawberry Banana Greek Yogurt Parfait

    It's a quick go to After School snack as well as a great breakfast idea!

    Yogurt parfaits are a great way to get your little ones to eat yogurt! You can add fruit, nuts, candies (I do in moderation), crumbled up cookies (yes I know that healthy), as well as even dice up a few vegetables to add into the yogurt.

    Strawberry banana parfaits are one of my favorite snacks to prepare for my kids. They prefer fruit over candy so I know that fruit never goes to waste in our home.
    Yogurt parfaits definitely need to be added to your Pinterest folder for Breakfast Recipes! They are so versatile, full of protein, and if you have a garden, a great way to enjoy some of your fresh fruit!

    Expert Tips, Ingredient List and Suggestions for Recipe Success

    Almond butter - for this recipe, you will use almond butter instead of peanut butter.

    Coconut oil - this is easily found now at your local grocery store.

    Rolled oats - not quick oats.

    Sunflower seeds - if you can not find these, it's okay not to use them. 

    Strawberries - you can use frozen. 

    Step by Step Directions:

    1. Pre-heat -oven to 350°F and line an 8 x 8-inch baking pan with a piece of parchment paper, leaving a bit of overlap on the sides.

    2. In a high-powered blender or a food processor, combine the pitted dates, almond butter, honey, coconut oil, and vanilla extract. Blend until the mixture is smooth and creamy.

    3. Transfer the date mixture into a large mixing bowl and add the oats, cinnamon, salt, almonds, and sunflower seeds. Mix until well combined and the oats and nuts are nicely coated.

    4. Transfer the granola mixture to the prepared baking dish and pat down into an even layer. Place in the pre-heated oven and bake until lightly golden brown and toasted on top, approximately 20 minutes.

    5. Remove from oven and cool to room temperature. Granola will crumble as you remove it from the pan, with some larger chunks.

    6. To serve, alternate layers of Greek yogurt, granola, sliced bananas, and fresh strawberries in 4 parfait dishes or mason jars. Enjoy!
